#TogetherAtHome with IKEA - Halawet el Jebn

We are together at home and I fancied a little upgrade my kitchen tools and plates. After a #socialdistancting order from IKEA, I decided to celebrate with my favorite Middle Eastern sweet: Halawet El Jebn (cheese rolls). Here is my easy steps to a gustative trip to Lebanon:

Ingredients (8 people):

- 250 grams of ricotta cheese
- 250 grams of mascarpone 
- 400 grams of mozzarella
- 150 grams of fine semolina
- 200 grams of sugar
- lemon juice
- 2 tablespoons of orange blossom
- 15 cl + one cup of water
- powdered pistachios

1st step:

Start making the syrup by putting on low heat the sugar, one cup of water and a few drops of lemon juice. Mix and bring it to a boil over low heat. Out of of the fire, add the tablespoons of orange blossom, mix it and let cool. 

Meanwhile, cut the mozzarella into strips and soak into cold water for 30 minutes. After this, drain the mozzarella and cut it into small cubes.

2nd step:

Pour the semolina onto a non-stick pan and bring it to a boil over low heat for a few minutes without coloring it. Add 15 cl of water and the mozzarella. Mix it well until a homogeneous result.

3rd step:

Cut the dough in two equal parts and put it on the working plan. Soak your hands in the cold syrup and spread out the dough.

4th step:

Let it cool and whisk the ricotta and mascarpone together until a homogeneous cream.

5th step:

Put the cream along one side of the dough. Roll it around it self twice, cut it and do the same again until the dough is finished. 

Final step:

Cut small bites et put it in the fridge. Before serving, sprinkle pistachios and syrup. Enjoy :)
